The hunt is on

A lovely friend has asked me to make a cake for her wedding in April.  Three cakes, to be precise.  A classic three tier white fondant covered creation, comprising a fruit cake, a chocolate cake and a mystery-flavour-of-my-choice cake.  Suggestions welcome!

So the hunt is on for the perfect chocolate and mystery cake recipes.  They need to bake well, slice well, keep well, and work with white fondant icing so no chocolately fudgey gloopiness, however delicious that may sound.  The plan is to fill and thinly ice the chocolate cake with plain buttercream before covering with fondant.  My work colleagues are proving to be willing cake testers and seem quite happy that I’ve started churning out chocolate cakes with alarming frequency, and don’t really seem to mind me badgering them with questions about how moist/light/crumbly their cake is!  So far this recipe is a definite front runner and I’m fancying a mystery cake like this!

    wow, that’s really exciting…… a surprise marble cake would be cool……. remember making one when I was at school…… two different recipes mixed (ish) and then cooked it was all marble….. really cool……

    Not sure if this will be of any use/you may already have it but: ‘Red Velvet Chocolate Heartache’ by Harry Eastwood is great for a random cake! (especially if you want to somehow make it with, like, courgette or pumpkin?!) Many of the recipes are made towards vegan so might allow others to eat cake they can’t normally have, lactose intolerants for example. x
