For the love of cauliflower

This woman loves cauliflower so much it featured in her wedding bouquet.  I wouldn’t go that far, but I have been on an autumnal cooking kick lately and I had half a cauliflower in the fridge so I made some soup and it was surprisingly yummy.  But cauliflower soup isn’t especially pretty so instead of a picture of white soup in a white bowl you are getting this photo of the cauliflower bouquet to spice things up a bit.  Ok?  Ok.

Cauliflower cheese soup

1.  Heat some olive oil in a pan and cook 1 chopped onion and 1 chopped garlic clove for a few minutes until soft.

2.  Break half a head of cauliflower into florets, add to the pan and stir for a few more minutes.

3.  Pour in 500mls chicken stock and bring to the boil, then reduce heat and simmer until the cauliflower is cooked through, about 10 mins.

4.  Stir in a handful of grated cheddar and blitz with a blender until smooth and slightly foamy.  Stir through more grated cheddar to taste.

I know it doesn’t sound like much but it is honestly the best soup I’ve made this year!  Trust me, and make it for your lunch this week.

    I make brocolli and cheese in pretty much the same way. Much better than the list of ingredients sounds!

    That bouquet actually looks quite nice with the cauliflower in it :-) I’ll have to try this soup – sounds delicious!
