Blackberrying
A few weeks ago my dad went blackberrying and brought me two tubfuls! The first tub was quickly made in to jelly (a la Delia, from her complete cookery course, which is invaluable) which Mr M and I are particularly enjoying with pancakes. The second tub was stowed safely in the freezer until such a time as I decided what to do with it.
Well, yesterday I decided to try a recipe I’ve had hanging around for ages and never quite got round to trying. So, I made some blackberry oat bars, only without the pecans because I didn’t have any and don’t really like nuts in cake anyway, and with granulated sugar instead of caster because I didn’t think I had any of that either. Turns out that sneaky little caster sugar was just lurking at the back of the cupboard, hiding behind the readybrek. Ho hum.
Now, yesterday I decided not to post this recipe, because I had some when it was fresh from the oven and it wasn’t that great. Oh no! thought I, I’ve wasted all those lovely blackberries! Fortunately, this was not the case, for when I tried another bit today it was surprisingly tasty. A bit too crumbly, perhaps, but still perfectly pleasant. Might have some with ice cream tomorrow for pudding. A bit of toffee sauce probably wouldn’t go amiss either. Yum!
Edit 11/10/08: These definitely get better with age, I am enjoying a couple for breakfast this morning!
